Ingredients

  • 6.3 oz (180g) short pasta (e.g., penne, fusilli)
  • 8.8 oz (250g) fresh green asparagus
  • 5.3 oz (150g) cherry tomatoes
  • 1 garlic clove
  • 2 tbsp extra virgin olive oil
  • 1.8 oz (50g) salted ricotta (or Parmesan Reggiano)
  • Fine salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Bring a large pot of salted water to a rolling boil.
  2. Meanwhile, wash the asparagus, snap off and discard the tough woody ends, then cut the spears into rounds, leaving the tips whole. Wash the cherry tomatoes and halve them.
  3. Heat the extra virgin olive oil in a large frying pan with the whole, slightly crushed garlic clove.
  4. Add the asparagus to the pan and sauté for 5-7 minutes over a medium heat. Then, add the cherry tomatoes and cook for another 3-4 minutes.
  5. Add the pasta to the boiling water and cook according to the packet instructions until al dente.
  6. Drain the pasta, reserving a ladleful of the cooking water, and transfer it directly to the frying pan with the vegetables. Remove the garlic, add the reserved pasta water, and mix everything thoroughly.
  7. Serve immediately, topping each portion with a generous grating of salted ricotta and a grinding of fresh black pepper.
