Quick Crispy Edamame and Shiitake Bowls

For those evenings when time is a precious commodity yet the craving for a flavourful and nourishing meal is undeniable, these vibrant edamame and shiitake bowls present the perfect solution. This culinary approach is designed for maximum efficiency, enabling you to prepare your rice, vegetables, and a rich, aromatic sauce all at once. The genius lies in the synchronisation: while your chosen grain gently cooks, you can effortlessly manage the other components without any idle moments. The result is a complete, wholesome meal that assembles rapidly, ideal for rounding off a busy day with both taste and tranquility.

Ingredients

  • 5.3 oz (150g) basmati rice (or quick-cook couscous)
  • 10.1 fl oz (300ml) water (for rice, or as per couscous instructions)
  • 5.3 oz (150g) shelled edamame (frozen)
  • 7.1 oz (200g) fresh shiitake mushrooms, cleaned and sliced
  • 5.3 oz (150g) broccoli florets, cut into small pieces
  • 2 tbsp soy sauce (or tamari for a gluten-free option)
  • 1 tbsp toasted sesame oil
  • 1 clove garlic, finely minced
  • 0.4 inch (1cm) fresh ginger, grated
  • Juice of 1/2 a lemon and zest of 1/4 of a lemon
  • 1 tbsp olive oil
  • Chilli flakes (optional), to taste

Method

  1. Bring the water to a boil in a small saucepan, add the rice and cook according to instructions, typically for 10-12 minutes, until the water is absorbed.
  2. Meanwhile, heat the olive oil in a large frying pan over a medium-high heat. Add the frozen edamame and cook for 5-7 minutes, stirring occasionally, until golden and crisp. Remove from the pan and set aside.
  3. In the same pan, add the sliced shiitake mushrooms and cook for 4-5 minutes, until tender and lightly golden.
  4. Stir the minced garlic and grated ginger into the mushrooms, cooking for another minute until fragrant.
  5. Pour the soy sauce and sesame oil into the pan with the mushrooms; if desired, add a pinch of chilli flakes. Stir well and let simmer for one minute.
  6. Steam or blanch the broccoli florets for 3-4 minutes, until tender but still crisp.
  7. Combine the cooked broccoli, lemon juice, and lemon zest with the rice. Divide the lemon-infused rice into two bowls, then top with the shiitake mushrooms and crispy edamame.

Serving & Leftovers

Serve the bowls immediately whilst hot to fully appreciate the crispiness of the edamame. Any leftovers can be stored in an airtight container in the fridge for up to 2 days. For best results, we recommend storing the crispy edamame separately and adding them just before serving to maintain their texture.
