Ingredients
- 5.3 oz (150g) basmati rice (or quick-cook couscous)
- 10.1 fl oz (300ml) water (for rice, or as per couscous instructions)
- 5.3 oz (150g) shelled edamame (frozen)
- 7.1 oz (200g) fresh shiitake mushrooms, cleaned and sliced
- 5.3 oz (150g) broccoli florets, cut into small pieces
- 2 tbsp soy sauce (or tamari for a gluten-free option)
- 1 tbsp toasted sesame oil
- 1 clove garlic, finely minced
- 0.4 inch (1cm) fresh ginger, grated
- Juice of 1/2 a lemon and zest of 1/4 of a lemon
- 1 tbsp olive oil
- Chilli flakes (optional), to taste
Method
- Bring the water to a boil in a small saucepan, add the rice and cook according to instructions, typically for 10-12 minutes, until the water is absorbed.
- Meanwhile, heat the olive oil in a large frying pan over a medium-high heat. Add the frozen edamame and cook for 5-7 minutes, stirring occasionally, until golden and crisp. Remove from the pan and set aside.
- In the same pan, add the sliced shiitake mushrooms and cook for 4-5 minutes, until tender and lightly golden.
- Stir the minced garlic and grated ginger into the mushrooms, cooking for another minute until fragrant.
- Pour the soy sauce and sesame oil into the pan with the mushrooms; if desired, add a pinch of chilli flakes. Stir well and let simmer for one minute.
- Steam or blanch the broccoli florets for 3-4 minutes, until tender but still crisp.
- Combine the cooked broccoli, lemon juice, and lemon zest with the rice. Divide the lemon-infused rice into two bowls, then top with the shiitake mushrooms and crispy edamame.
Serving & Leftovers
Serve the bowls immediately whilst hot to fully appreciate the crispiness of the edamame. Any leftovers can be stored in an airtight container in the fridge for up to 2 days. For best results, we recommend storing the crispy edamame separately and adding them just before serving to maintain their texture.
