Quick Mexican Pizza: Taco Bell Style Recipe

Crafting a flavourful and satisfying dinner in minimal time is often a top priority for busy weeknights. This Quick Mexican Pizza recipe, inspired by the iconic Taco Bell dish, has been designed with precisely that in mind. Utilising simple ingredients and a straightforward process, you’ll have a taste-rich meal on the table in under thirty minutes. The combination of seasoned minced beef, crispy tortillas, and melted cheese offers a comforting culinary experience without demanding excessive time in the kitchen, making it an ideal choice for efficient, wholesome eating.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Difficulty: Easy
  • Serves: 2 (2 pizzas, 4 tortillas)

Ingredients

  • 7 oz (200g) beef mince
  • 4 flour tortillas (approx. 8 inches / 20cm diameter)
  • 1/2 small onion, finely chopped
  • 1 clove garlic, minced
  • 3.5 fl oz (100ml) passata
  • 1 teaspoon chilli powder (or sweet paprika)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 3.5 oz (100g) grated cheddar cheese (or a pizza blend)
  • Vegetable oil (for frying tortillas, if not using an air fryer)
  • Optional garnishes: sour cream (or Greek yoghurt), fresh diced tomato, fresh coriander

Method

  1. In a large frying pan, heat a drizzle of oil over a medium heat. Add the chopped onion and cook for 2-3 minutes until translucent.
  2. Add the beef mince and cook, breaking up any lumps with a spatula, until completely browned, for about 5-7 minutes. Drain any excess fat.
  3. Stir in the minced garlic, chilli powder, ground cumin, and oregano. Mix well and cook for 1 minute until the spices release their aroma.
  4. Incorporate the passata, a pinch of salt, and pepper. Bring to a gentle simmer, then reduce the heat and let it bubble for 5 minutes, stirring occasionally, to thicken the sauce.
  5. Meanwhile, prepare the tortillas. If using an air fryer, lightly spray them with oil and cook at 180°C (350°F) for 2-3 minutes per side, until lightly golden and crisp. If using a frying pan, fry them in a little hot oil for 1 minute per side.
  6. Assemble the pizzas: place one crispy tortilla onto a baking tray lined with baking parchment. Spread half of the beef filling over the tortilla, leaving a small border. Cover with another tortilla, then sprinkle with half of the grated cheese. Repeat for the second pizza.
  7. Cook the pizzas in the air fryer at 180°C (350°F) for 3-5 minutes, or in a preheated oven at 200°C (400°F) (fan-assisted) for 5-7 minutes, until the cheese has melted and is lightly golden. Serve immediately with your desired garnishes.

Serving & Leftovers

Serve these Mexican pizzas hot, straight from the air fryer or oven. They make a perfect stand-alone meal or can be accompanied by a simple green salad. Any leftovers can be stored in an airtight container in the fridge for up to 1 day, though they are best enjoyed fresh to maintain the tortillas’ crispness.
