Ingredients

  • 10.6 oz (300g) beef strips
  • 7 oz (200g) sliced button mushrooms
  • 1 small onion, finely chopped
  • 2 tbsp butter (or olive oil)
  • 1 clove garlic, minced
  • 7 fl oz (200ml) hot beef stock
  • 1 tbsp Dijon mustard
  • 5.3 oz (150g) sour cream (or full-fat Greek yoghurt)
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley, to garnish
  • 7 oz (200g) egg tagliatelle (or rice)

Method

  1. Bring a large pot of salted water to the boil for the tagliatelle. Meanwhile, season the beef strips generously with salt and black pepper.
  2. In a large frying pan, melt the butter over a medium-high heat. Cook the beef strips for 2-3 minutes per side until they are nicely browned; remove them from the pan and set aside.
  3. In the same pan, add the finely chopped onion and cook for 3-4 minutes until it becomes translucent. Stir in the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are tender and their liquid has evaporated.
  4. Pour the hot beef stock and Dijon mustard into the pan, scraping the bottom to loosen any delicious browned bits. Bring the mixture to a gentle boil and let it simmer for 2 minutes to slightly reduce the sauce.
  5. Meanwhile, cook the tagliatelle in the boiling water according to the packet instructions until al dente.
  6. Remove the pan from the heat and gently stir in the sour cream until the sauce is smooth and creamy. Return the cooked beef to the pan and gently heat for about a minute, being careful not to boil the sauce as this can cause it to split.
  7. Serve the Beef Stroganoff immediately over the drained tagliatelle, garnished with plenty of fresh chopped parsley.

Serving & Leftovers

Serve the Beef Stroganoff hot, immediately after preparation, preferably accompanied by fresh egg tagliatelle or basmati rice. Any leftovers can be stored in an airtight container in the fridge for up to 2 days. We recommend reheating gently over a low heat, adding a tablespoon of stock or water if the sauce becomes too thick.
