Ingredients
- 7 oz (200g) spaghetti (cooking time: 8-10 minutes)
- 7 oz (200g) fresh salmon fillet, skinless and boneless (diced: 2 minutes)
- 1 unwaxed lemon (juice and zest: 1 minute)
- 1 clove garlic (finely chopped: 30 seconds)
- 2 tbsp extra virgin olive oil (measured: 10 seconds)
- 1 fl oz (30ml) dry white wine (optional) (measured: 10 seconds)
- A small bunch of fresh parsley, finely chopped (chopped: 30 seconds)
- Fine sea salt and freshly ground black pepper, to taste
Method
- Bring a large saucepan of salted water to a rolling boil. Once boiling vigorously, add the spaghetti and cook according to packet instructions, usually for 8-10 minutes, until al dente.
- Whilst the pasta cooks, heat the extra virgin olive oil in a non-stick frying pan over a medium heat. Add the finely chopped garlic and sauté for about 30 seconds, taking care not to burn it.
- Add the diced salmon to the pan and cook for 3-4 minutes, turning gently, until lightly golden and cooked through.
- If using, deglaze the salmon with the white wine and allow the alcohol to evaporate for about one minute. Squeeze the juice of half a lemon directly into the pan and grate in half of the lemon zest.
- Drain the spaghetti al dente, reserving a ladleful of the pasta cooking water. Transfer the pasta directly into the frying pan with the salmon mixture. Add the chopped parsley, a pinch of salt and a generous grinding of black pepper. If needed, add a little of the reserved pasta water to create a creamier sauce. Stir well to combine all ingredients thoroughly. Serve immediately, garnishing with extra grated lemon zest if desired.
