Quick Overview
- Preparation Time: 10 minutes
- Cooking Time: 18-20 minutes
- Difficulty: Easy
- Serves: 2-3
Ingredients
- 14 oz (400g) yellow-fleshed potatoes
- 8.8 oz (250g) broccoli florets
- 3.5 oz (100g) diced smoked pancetta
- 2 tbsp (30ml) extra virgin olive oil
- 1 garlic clove, finely minced
- Fine salt, to taste
- Freshly ground black pepper, to taste
- A pinch of chilli flakes (optional)
Method
- Begin by preheating your air fryer to 200°C (or a fan-assisted oven to 220°C). Meanwhile, peel the potatoes and cut them into approximate 1.5-2 cm cubes. Wash the broccoli and divide it into small florets.
- In a large bowl, combine the potato cubes and broccoli florets. Season with one tablespoon of extra virgin olive oil, salt, pepper, and if desired, a pinch of chilli flakes. Mix well to ensure an even coating of the seasoning.
- Arrange half of the seasoned potatoes and broccoli in the air fryer basket (or on a baking tray lined with baking parchment), trying not to overcrowd them for more uniform cooking. Cook for 8-10 minutes.
- While the first batch cooks, heat the remaining oil in a non-stick frying pan over medium heat. Add the diced pancetta and cook for 5-7 minutes, stirring occasionally, until golden and crispy. Add the finely minced garlic during the last 2 minutes of the pancetta’s cooking time.
- Remove the cooked potatoes and broccoli from the air fryer. Add the other half of the potatoes and broccoli to the air fryer and cook for another 8-10 minutes. Once all the vegetables are cooked, they should be tender inside and crispy on the outside.
- Combine the roasted potatoes and broccoli with the crispy pancetta and garlic in the frying pan. Stir gently to incorporate all the ingredients and serve immediately.
Serving & Leftovers
This dish is best served immediately, straight from the pan, to fully appreciate the crispy textures of the ingredients. Any leftovers can be stored in an airtight container in the fridge for up to 2 days, and gently reheated in a frying pan or air fryer to maintain crispness.
