  • 1 egg yolk, lightly beaten (for brushing, optional)

Method

  1. Preheat your oven to 200°C (180°C fan/Gas 6). This ensures the puff pastry becomes wonderfully crisp quickly.
  2. In a non-stick frying pan, heat the extra virgin olive oil over a medium flame. Add the finely chopped onion (or shallot) and sauté for about 2 minutes, until it becomes translucent.
  3. Add the finely shredded Savoy cabbage and thinly sliced apple to the pan. Sauté for 3-4 minutes, or until the cabbage has softened slightly. Season with salt and freshly ground black pepper. If using, stir in the chopped fresh rosemary.
  4. Unroll the puff pastry sheet onto a baking tray lined with baking parchment. Spread the cabbage and apple mixture evenly over the pastry, making sure to leave an approximate 0.8 inch (2cm) border around the edges.
  5. Arrange the diced Taleggio cheese over the filling. Fold the pastry borders inwards, creating a rustic edge. If you prefer a golden finish, brush the pastry edges with the lightly beaten egg yolk.
  6. Bake in the preheated oven for 18-20 minutes, or until the puff pastry is golden and crispy, and the Taleggio is melted and lightly gratinéed.
