Ingredients

  • 5.6 oz (160g) pearl barley
  • 6.3 oz (180g) tinned tuna in oil, drained
  • 5.3 oz (150g) cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1.8 oz (50g) pitted Taggiasche olives
  • 1.8 oz (50g) fresh rocket
  • 1 fl oz (30ml) extra virgin olive oil
  • Juice of 1/2 lemon
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Bring a pan of salted water to the boil, then add the pearl barley and cook according to packet instructions, usually for about 12 minutes, until al dente.
  2. Whilst the barley is cooking, prepare your vegetables: halve the cherry tomatoes and dice the cucumber. Drain the tuna from its oil.
  3. Prepare the dressing by emulsifying the extra virgin olive oil with the lemon juice, a pinch of fine sea salt, and a grind of fresh black pepper in a small bowl.
  4. Once cooked, drain the barley and transfer it evenly to two individual serving bowls, forming the base of your meal.
  5. Arrange the drained tuna, cherry tomatoes, diced cucumber, pitted olives, and fresh rocket on top of the barley, creating distinct sections for an inviting presentation.
  6. Drizzle each bowl generously with the prepared dressing just before serving, gently mixing all the ingredients if desired.
