- 8.8 oz (250g) halloumi, cut into approx. 2cm cubes
- 7 oz (200g) white cabbage, cut into approx. 2-3cm wedges or squares
- 1/2 small red onion, cut into petals or wedges
- 2 tbsp extra virgin olive oil
- 1 lemon (juice and a little zest)
- 2 tbsp fresh parsley, finely chopped
- Fine salt, to taste
- Freshly ground black pepper, to taste

Method
- Begin by preparing the cabbage and halloumi. Cut the cabbage into pieces similar in size to the halloumi cubes, and slice the red onion into petals.
- Next, alternately thread the halloumi cubes, cabbage pieces, and onion petals onto the skewers. If using wooden skewers, we recommend soaking them in water for 10 minutes beforehand to prevent them from burning.
- Heat a griddle pan or non-stick frying pan over a medium-high heat with one tablespoon of olive oil. Once the pan is thoroughly hot, arrange the skewers.
- Cook the skewers for about 3-4 minutes per side, turning them gently, until the halloumi is golden and the cabbage is tender yet still crisp. This process will take approximately 12-15 minutes in total.
- While the skewers are cooking, prepare the dressing: in a small bowl, combine the lemon juice, one tablespoon of olive oil, the finely chopped parsley, a light grating of lemon zest, salt, and pepper. Mix well.
- Once cooked, remove the skewers from the pan and immediately drizzle with the lemon and herb dressing.
