- 6 large eggs
- 1 medium courgette
- 3.5 oz (100g) cherry tomatoes, halved
- 2.5 oz (70g) speck, diced or thinly sliced
- 1.1 oz (30g) grated Parmesan Reggiano
- 1/2 small onion, finely chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp whole milk (or water)
- Salt and freshly ground black pepper to taste
Method
- Begin by finely chopping the onion and cutting the courgette into julienne strips or small cubes. Halve the cherry tomatoes.
- In an approx. 9.5-inch (24cm) non-stick frying pan, heat the olive oil over a medium flame. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
- Add the courgettes and cook for 4-5 minutes, stirring occasionally, until they are tender but still slightly crisp. Stir in the speck and cherry tomatoes, continuing to cook for another 2 minutes.
- Meanwhile, in a large bowl, crack the eggs and vigorously whisk them with the milk, grated Parmesan, salt, and pepper.
- Pour the egg mixture over the vegetables and speck in the frying pan, distributing it evenly. Cover with a lid and cook over a low heat for 8-10 minutes, or until the edges of the frittata are well set and the centre is almost firm.
- To finish the cooking, you can either flip the frittata onto a plate and slide it back into the pan for a couple of minutes on the other side, or place it under a preheated grill for 2-3 minutes until the surface is golden.
- Allow the frittata to rest for a minute before slicing and serving.
