Its well-balanced composition makes it a dependable choice for your weekly meal rotation. With minimal preparation and efficient cooking time, this recipe demonstrates how effortlessly you can serve a complete, home-cooked dinner in around 30 minutes, even on the busiest of days.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 20 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 10.6 oz (300g) turkey mince
  • 1.8 oz (50g) breadcrumbs
  • 1 small egg
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 small onion (or 1 shallot), finely chopped
  • 1 small carrot, peeled and finely chopped
  • 1 celery stick, finely chopped
  • 42.3 fl oz (1.2 litres) chicken or vegetable stock
  • 3.5 oz (100g) orzo (small pasta)

Method

  1. In a medium bowl, combine the turkey mince, breadcrumbs, egg, parsley, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Mix gently until just combined, then form into approximately 20-24 small meatballs, about 2cm in diameter.
  2. Heat the olive oil in a large pot or casserole dish over a medium heat. Add the finely chopped onion, carrot, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables have softened.
  3. Pour the chicken or vegetable stock into the pot, increase the heat, and bring to a rolling boil.
  4. Once the stock is boiling, reduce the heat to medium-low and carefully add the prepared meatballs. Simmer gently for about 5-7 minutes, or until they are cooked through.
  5. Stir in the orzo and continue to cook for another 8-10 minutes, or until the orzo is al dente. Taste and adjust seasoning with salt and pepper as needed.
  6. Remove the pot from the heat and let it rest for a couple of minutes before serving hot. Garnish with a sprinkle of fresh parsley, if desired.

Serving & Leftovers

Serve this hearty soup warm, perhaps with a side of crusty bread or a sprinkle of Parmesan. Leftovers can be stored in an airtight container in the fridge for 2-3 days; gently reheat, adding a splash of stock if the soup has thickened too much.
