Ingredients
- 8.8 oz (250g) natural tofu (firm or extra-firm), well pressed
- 7 oz (200g) fresh spinach
- 5.3 oz (150g) vegan ricotta
- 8 small corn or flour tortillas
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, finely chopped
- Juice of 1/2 a lemon
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and freshly ground black pepper, to taste
