Method

  3. Reduce the heat to low, cover the pot, and let it simmer for 10-12 minutes, or until the orzo has absorbed most of the stock and is al dente. Stir occasionally to prevent sticking.
  4. Stir the cleaned prawns directly into the pot with the orzo. Mix gently and cover again. Cook for another 3-5 minutes, or until the prawns are cooked through and opaque.
  5. Remove the pot from the heat. Stir in the juice of half a lemon and the chopped fresh parsley. Season with salt and pepper to taste.
