Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 20 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 2 salmon fillets, approx. 6 oz (170g) each
  • 8.8 oz (250g) asparagus, hard ends removed
  • 5.3 oz (150g) cherry tomatoes, halved
  • 1 lemon, half juiced, half thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Method

  1. Prepare your ingredients: Rinse the salmon and pat dry with kitchen paper. Season the fillets generously with salt and pepper. Trim the woody ends from the asparagus and halve the cherry tomatoes. Finely chop the garlic.
  2. Heat a large non-stick frying pan over a medium-high heat with the olive oil. Once the oil is hot, place the salmon fillets skin-side down in the pan. Cook for 4-5 minutes per side, or until the salmon is golden and cooked to your liking. Remove the salmon from the pan and set aside.
  3. In the same pan, add the asparagus and chopped garlic. Sauté for 3-4 minutes, stirring occasionally, until the asparagus is tender-crisp.
  4. Add the halved cherry tomatoes to the pan with the asparagus. Cook for a further 2-3 minutes, until the tomatoes begin to release their juices and soften slightly.
  5. Squeeze the juice from half the lemon over the asparagus and cherry tomatoes. Return the salmon fillets to the pan with the vegetables. Arrange some whole lemon slices on top of or alongside the salmon and vegetables.
  6. Serve the salmon and vegetables immediately on plates. Garnish with fresh chopped parsley, if desired, and a grinding of fresh black pepper.

Serving & Leftovers

This dish is designed to be served hot, immediately after preparation, to best enjoy the freshness of the ingredients. Any leftovers can be stored in an airtight container in the fridge for up to 1-2 days. The salmon may dry out slightly if reheated; it’s best to warm gently in a pan or microwave with a drizzle of olive oil.
