- 7 oz (200g) fresh sausage (skin removed)
- 5.3 oz (150g) fresh button mushrooms
- 1/2 small onion
- 1 garlic clove
- 3.5 fl oz (100ml) double cream
- 1.8 oz (50g) grated Parmesan cheese
- 2 tablespoons extra virgin olive oil
- Fine sea salt, to taste
- Freshly ground black pepper, to taste
- Fresh chopped parsley (for garnishing, optional)
Method
- Bring a large saucepan of salted water to a rolling boil for the pasta.
- Meanwhile, heat the olive oil in a non-stick frying pan over a medium heat. Add the sausage, removed from its casing and crumbled, then brown for about 5-7 minutes until golden.
- Add the finely chopped onion and the crushed whole garlic clove to the pan with the sausage. Cook for another 3 minutes, stirring occasionally.
