Speedy Jalapeño Popper Chicken Sandwiches

Weeknight evenings demand quick solutions without sacrificing flavour. These Jalapeño Popper Chicken Sandwiches were designed for just that: a satisfying dish that comes together efficiently, allowing you to enjoy a delicious dinner even when time is short. The key lies in managing multiple steps in parallel. While the chicken cooks rapidly in the pan, you can prepare the creamy cheese mixture and crisp up the bacon. There’s no unnecessary waiting, just a logical sequence of actions leading to a surprisingly tasty result. Our goal is to maximise every minute in the kitchen, transforming simple ingredients into a rich, comforting culinary experience, all completed in around 30 minutes. It’s proof that you don’t need a lot of time to create something special and satisfying after a long day.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Difficulty: Easy
  • Serves: 2 sandwiches

Ingredients

  • 2 large rolls (such as ciabatta or focaccia style)
  • 7 oz (200g) chicken breast, thinly sliced (about 1cm)
  • 3.5 oz (100g) cream cheese
  • 2 fresh jalapeños, deseeded and finely chopped
  • 1.75 oz (50g) smoked streaky bacon, thinly sliced
  • 1 oz (30g) grated provola or scamorza cheese (optional)
  • 1 tbsp extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Method

  1. Begin by preparing your ingredients: thinly slice the chicken breast, finely chop the deseeded jalapeños, and grate the provola or scamorza cheese if using.
  2. Heat the olive oil in a non-stick frying pan over a medium-high heat. Season the chicken slices with salt and pepper, then cook for 3-4 minutes per side until golden brown and thoroughly cooked through. Set aside.
  3. In the same pan, add the bacon slices and cook over a medium heat until crispy. Transfer to absorbent kitchen paper to remove any excess fat, then crumble into pieces.
  4. In a bowl, combine the cream cheese with the chopped jalapeños and the grated provola or scamorza (if using). Season with salt and pepper to taste.
  5. Slice the rolls in half and lightly toast them for a couple of minutes in the pan or a toaster, if desired.
  6. Generously spread the spicy cream cheese mixture onto the base of each roll. Top with the cooked chicken and finish with the crispy bacon.
  7. Close the sandwiches and serve immediately.

Serving & Leftovers

These sandwiches are best served warm, freshly assembled. They are not ideal for storing pre-assembled as the bread may become soggy. Individual components, such as the cooked chicken and the cream cheese mixture, can be stored in airtight containers in the fridge for up to 2 days and assembled just before serving.
