Quick Overview
- Preparation Time: 10 minutes
- Cooking Time: 20 minutes
- Difficulty: Easy
- Serves: 4
Ingredients
- 10.6 oz (300g) turkey mince
- 1.8 oz (50g) breadcrumbs
- 1 small egg
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 1 small onion (or 1 shallot), finely chopped
- 1 small carrot, peeled and finely chopped
- 1 celery stick, finely chopped
- 42.3 fl oz (1.2 litres) chicken or vegetable stock
- 3.5 oz (100g) orzo (small pasta)
Method
- In a medium bowl, combine the turkey mince, breadcrumbs, egg, parsley, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Mix gently until just combined, then form into approximately 20-24 small meatballs, about 2cm in diameter.
- Heat the olive oil in a large pot or casserole dish over a medium heat. Add the finely chopped onion, carrot, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables have softened.
- Pour the chicken or vegetable stock into the pot, increase the heat, and bring to a rolling boil.
- Once the stock is boiling, reduce the heat to medium-low and carefully add the prepared meatballs. Simmer gently for about 5-7 minutes, or until they are cooked through.
- Stir in the orzo and continue to cook for another 8-10 minutes, or until the orzo is al dente. Taste and adjust seasoning with salt and pepper as needed.
- Remove the pot from the heat and let it rest for a couple of minutes before serving hot. Garnish with a sprinkle of fresh parsley, if desired.
Serving & Leftovers
Serve this hearty soup warm, perhaps with a side of crusty bread or a sprinkle of Parmesan. Leftovers can be stored in an airtight container in the fridge for 2-3 days; gently reheat, adding a splash of stock if the soup has thickened too much.
