- 2 fl oz (60ml) whole milk
- 3.5 oz (100g) cream cheese (such as Philadelphia), at room temperature
- 2 tablespoons icing sugar
- 1/2 teaspoon vanilla extract
Method
- Preheat your oven to 400°F (200°C), or 350°F (180°C) for fan ovens. Line a 12-hole muffin tin with paper cases.
- In a large bowl, combine the plain flour, light brown sugar, baking powder, bicarbonate of soda, ground cinnamon, freshly grated nutmeg, and fine salt. Whisk well to combine.
- In a separate bowl, whisk together the pumpkin purée, egg, vegetable oil, and whole milk until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined. Be careful not to overmix.
- In a small bowl, whisk the cream cheese, icing sugar, and vanilla extract until you have a smooth cream.
