Method

  1. Bring a large pot of generously salted water to a rolling boil. Cook the spaghetti according to package instructions until al dente.
  2. Whilst the pasta cooks, prepare the sauce. Finely grate the zest from both lemons and then squeeze their juice.
  3. In a large frying pan, heat the olive oil over a medium-low heat. Add the minced garlic and chilli flakes (if using), then sauté for about 1 minute until the garlic is fragrant but not browned.
  4. Drain the spaghetti, reserving about half a cup (4 fl oz/120ml) of the pasta cooking water. Transfer the spaghetti directly into the frying pan with the oil and garlic.
  5. Add the lemon zest, lemon juice, chopped parsley, and grated Pecorino. Toss vigorously, adding a little of the reserved pasta cooking water if needed to create a creamy sauce that perfectly coats the spaghetti.
  6. Taste and adjust the seasoning with salt and pepper as required. Serve immediately, garnished with more grated Pecorino and a sprinkle of fresh parsley.

Serving & Leftovers
