Ingredients

  • 14.1 oz (400g) chicken breast, cut into 0.8 inch (2cm) cubes
  • 1 tbsp extra virgin olive oil

  • 2 cloves garlic, minced
  • 1 yellow pepper, deseeded and cut into strips
  • 2 medium courgettes, cubed
  • 14.1 fl oz (400ml) passata
  • 3.5 oz (100g) cream cheese
  • 2.5 oz (70g) mozzarella, grated or diced into small cubes
  • Salt and freshly ground black pepper, to taste
  • Dried oregano, to taste

Method

  1. Preheat your oven’s grill. In a large, oven-safe frying pan or casserole dish, heat the olive oil over a medium flame.
  2. Add the chopped onion and yellow pepper, cooking for approximately 4-5 minutes until slightly softened.
  3. Stir in the garlic and cubed chicken. Brown the chicken for 3-4 minutes, stirring occasionally, until golden on all sides.
  4. Fold in the courgettes and passata. Season with salt, pepper, and oregano. Bring to a gentle boil, then reduce the heat and simmer for 5-7 minutes.
  5. Remove from the heat, add the cream cheese, and stir until it’s melted and the sauce is wonderfully creamy. Taste and adjust seasoning if required.
  6. Evenly sprinkle the mozzarella over the surface of the casserole. Place under the grill for 3-5 minutes, or until the cheese is melted, lightly golden, and bubbling.
