- 8.8 oz (250g) firm or extra-firm natural tofu
- 1 medium red pepper
- 1 medium yellow pepper
- 1 small red onion
- 2 cloves garlic
- 0.8 inch (2cm) piece fresh ginger
- 1 fresh red chilli (or ½ tsp chilli powder)
- ½ tsp freshly ground black pepper
- 1 tbsp tomato purée
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Fine salt, to taste
- Fresh chopped coriander, to garnish (optional)
Method
- Begin by pressing the tofu to remove excess water, then cut it into approximate 0.8 inch (2cm) cubes and pat thoroughly dry with kitchen paper.
- Prepare your vegetables: thinly slice the peppers and red onion into strips. Finely chop the garlic, ginger, and chilli.
- Heat 1 tbsp of olive oil in a large non-stick frying pan over a medium-high heat. Add the tofu and pan-fry for 5-7 minutes, turning occasionally, until golden brown on all sides. Transfer the tofu to a plate and set aside.
- In the same pan, add the remaining oil and sauté the onion and peppers for about 5 minutes, until slightly softened. Stir in the chopped garlic, ginger, and chilli, and cook for another minute until fragrant.
- Stir in the tomato purée and black pepper, mixing well. Add a couple of tablespoons of water or vegetable stock to create a sauce and simmer for 2-3 minutes, allowing the flavours to meld.
