  • 7 oz (200g) fresh or dried egg tagliatelle

Method

  1. Bring a large pot of salted water to a rolling boil. Once boiling, add the tagliatelle and cook according to packet instructions, usually 2-4 minutes for fresh or 8-10 minutes for dried.
  2. Whilst the pasta cooks, prepare the sauce. In a large frying pan, heat the extra virgin olive oil over a medium heat. Add the finely chopped garlic cloves and the chilli. Sauté for about 1 minute, being careful not to burn the garlic.
  3. Halve the cherry tomatoes and add them to the pan. Sauté for 4-5 minutes until they have softened slightly and released their juices. Season lightly with salt and pepper.
  4. Add the prawns to the pan with the tomatoes. Cook for 2-3 minutes, or until they turn pink and opaque. If desired, deglaze with the white wine and allow the alcohol to evaporate for about 1 minute.
  5. Drain the tagliatelle al dente, reserving one cup of the pasta cooking water. Transfer the tagliatelle directly into the pan with the sauce.
  6. Toss the pasta with the sauce for a minute, adding a tablespoon or two of the reserved pasta water if the sauce appears too dry, to create a creamier consistency.
  7. Turn off the heat, add the roughly chopped fresh parsley and gently mix before serving immediately.
