Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18-20 minutes
  • Difficulty: Easy
  • Serves: 2 (or 4 smaller portions)

Ingredients

  • 4 wheat tortillas (approx. 8 inches diameter)
  • 7 oz (200g) beef mince
  • 1/2 small onion, finely chopped
  • 1 garlic clove, minced
  • 14 oz (400g) cannellini beans, drained and rinsed
  • 3.5 fl oz (100ml) tomato passata
  • 3.5 oz (100g) fresh mozzarella, grated or roughly chopped
  • 1/2 teaspoon sweet paprika
  • A pinch of chilli powder (optional)
  • 1 medium fresh tomato, diced
  • 1 spring onion, thinly sliced (tender green and white parts only)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Method

  1. In a large non-stick frying pan, heat 1 tablespoon of olive oil over a medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for another minute.
  2. Add the beef mince to the pan, breaking it up with a wooden spoon. Cook for 5-7 minutes, or until well browned. Drain any excess fat, then season with paprika, chilli powder (if using), salt, and pepper. Stir well and remove from the heat.
  3. In a bowl, mash the drained cannellini beans with a fork or potato masher until a coarse paste forms. Season with a pinch of salt and pepper.
  4. Clean the frying pan. Heat the remaining 1 tablespoon of olive oil over a medium heat. Cook the tortillas one at a time for 1-2 minutes per side until lightly golden and crisp. Alternatively, you can bake them in an oven at 350°F (180°C) for 5-7 minutes.
  5. To assemble each pizza: place one crisp tortilla onto a baking tray. Spread half of the bean paste over it. Top with a second tortilla. Spread half of the beef mince over this, followed by a generous tablespoon of tomato passata, and finally, half of the mozzarella.
  6. Bake under a preheated oven grill or in a preheated oven at 390°F (200°C) for 3-5 minutes, or until the mozzarella is melted and lightly golden. Repeat for the second pizza.
  7. Once ready, transfer the pizzas to a chopping board. Garnish each with the diced fresh tomato and sliced spring onion before serving.

Serving & Leftovers

Serve these Quick Mexican Pizzas immediately whilst hot, sliced into wedges like a traditional pizza. They are perfect as a complete meal for an informal supper. Any leftovers can be stored in an airtight container in the fridge for up to one day, though the tortillas may lose some of their crispness. Freezing is not recommended.
