Method

  1. Begin by preparing the blackberry sauce. Tip the blackberries, lemon juice, and water (if using fresh berries) into a small saucepan. Bring to a boil over a medium heat, then reduce the heat and simmer for approximately 5 minutes, stirring occasionally, until the blackberries have softened and released their juices. If preferred, you can lightly mash them with a fork or pass them through a sieve for a smoother sauce. Set aside to cool slightly.
  2. Whilst the sauce is cooling, crush the biscuits. You can do this by placing them in a food bag and bashing them with a rolling pin, or by using a food processor for a finer texture.
  3. Prepare the mascarpone cream. In a large bowl, combine the cold mascarpone, icing sugar, and vanilla extract. Whisk by hand or with an electric whisk for a couple of minutes until you achieve a smooth, slightly airy cream. Be careful not to over-whisk, as mascarpone can separate.
  4. Assemble the cups. Divide a portion of the crushed biscuits evenly among four glasses or dessert cups.
  5. Add a generous layer of the mascarpone cream over the biscuits, gently levelling with a spoon.
  6. Spoon a tablespoon of the blackberry sauce over the cream. Repeat the layers with biscuits, cream, and sauce, finishing with a final flourish of sauce on top.
