Ingredients

  • 5.3 oz (150g) fine bulgur
  • 7.1 oz (200g) ripe tomatoes, diced
  • 1 medium cucumber, diced
  • 1 fresh spring onion, finely chopped
  • 1 large bunch fresh parsley, finely chopped
  • 0.5 bunch fresh mint, finely chopped
  • Juice of 1 large lemon
  • 2.1 fl oz (60ml) extra virgin olive oil
  • Fine salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Bring a sufficient quantity of water to the boil to cover the bulgur. Pour the bulgur into a heatproof bowl and cover with the boiling water, allowing it to soak for approximately 15-20 minutes, or until tender and the water has been absorbed.
  2. Whilst the bulgur rehydrates, finely chop the parsley and mint. Dice the tomatoes and cucumber into small cubes, and thinly slice the spring onion.
  3. Once the bulgur is ready, drain any excess water and gently squeeze to remove any remaining moisture. Transfer it to a large bowl and fluff with a fork.
  4. Add the diced tomatoes, cucumber, chopped spring onion, parsley, and mint to the bulgur.
  5. Dress with the lemon juice, extra virgin olive oil, salt, and pepper. Gently mix to combine all the ingredients thoroughly and serve immediately.

Serving & Leftovers

Serve the tabbouleh immediately at room temperature or slightly chilled. It makes an excellent side dish for grilled meats, fish, or as a light main course.
