Ingredients

  • 8 oz (225g) chicken breast
  • 5.5 oz (150g) mushrooms, button or chestnut
  • 7 oz (200g) tagliatelle
  • 1 small onion
  • 2 cloves garlic
  • 5 fl oz (150ml) double cream
  • 3.5 fl oz (100ml) chicken stock
  • 1 oz (30g) Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

Method

  1. Bring a large saucepan of salted water to a rolling boil for the tagliatelle. Meanwhile, finely dice the onion and mince the garlic. Slice the chicken breast into bite-sized pieces and slice the mushrooms.
  2. Heat the olive oil in a large frying pan over a medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
  3. Add the sliced chicken to the pan and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the pan and set aside.
  4. Add the sliced mushrooms to the same pan and cook for 5-6 minutes until they’ve released their liquid and started to brown. Return the chicken to the pan.
  5. Pour in the chicken stock and double cream, then bring to a gentle simmer. Add the cooked tagliatelle directly to the sauce, along with the grated Parmesan and fresh parsley. Toss everything together until the pasta is well coated and the sauce has thickened slightly. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with extra Parmesan and a sprig of fresh parsley, if desired.
