  • 1 tbsp chopped fresh mint
  • Juice of ½ lemon
  • Salt, to taste

3. Aromatic Chilli Oil

  • 3.5 fl oz (100ml) extra virgin olive oil
  • 1-2 dried chillies, to taste
  • 2 cloves garlic, thinly sliced

4. Quick Lemon & Oregano Marinade

  • Juice of 1 lemon
  • 4 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • ½ clove garlic, finely chopped
  • Salt and pepper, to taste

5. Savoury Seed & Nut Crumble

  • 2 tbsp toasted sunflower seeds
  • 2 tbsp toasted sesame seeds
  • 2 tbsp coarsely chopped almonds
  • ¼ tsp chilli flakes (optional)
  • Flaky sea salt, to taste

6. Mint Simple Syrup

  • 3.5 oz (100g) caster sugar
  • 3.5 fl oz (100ml) water
  • 10-12 fresh mint leaves

7. Fresh Cherry Tomato Sauce

  • 5.3 oz (150g) cherry tomatoes, halved or quartered
  • 2 tbsp chopped fresh basil
  • ½ clove garlic, finely chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

8. Sweet Balsamic Glaze

  • 3.5 fl oz (100ml) good quality balsamic vinegar
  • 1 tbsp honey (or agave syrup)

Method

  1. For the Citrus Herb Dressing, combine all ingredients in a small bowl and mix well. Taste and adjust seasoning with salt and pepper.
  2. For the Yoghurt and Cucumber Sauce, grate the cucumber and squeeze out any excess water. Combine the cucumber with the Greek yoghurt, garlic, mint, lemon juice, and salt in a bowl, mixing until well combined.
  3. For the Aromatic Chilli Oil, gently heat the olive oil in a small saucepan over a very low flame with the dried chillies and thinly sliced garlic for about 5 minutes, ensuring it doesn’t fry. Allow to cool completely and strain if desired.
  4. For the Quick Lemon & Oregano Marinade, combine lemon juice, olive oil, oregano, garlic, salt, and pepper in a small bowl, emulsifying with a fork.
  5. For the Savoury Seed & Nut Crumble, coarsely chop the almonds if not already chopped. Combine sunflower seeds, sesame seeds, chopped almonds, chilli flakes, and flaky sea salt in a small bowl.
  6. For the Mint Simple Syrup, combine sugar and water in a saucepan. Bring to a boil, then reduce the heat and simmer for 2 minutes, stirring until the sugar has dissolved. Remove from the heat, add the fresh mint leaves, and allow to infuse for 10 minutes before straining.
  7. For the Fresh Cherry Tomato Sauce, halve or quarter the cherry tomatoes and finely chop the basil and garlic. Combine all ingredients in a bowl, stir gently, and season with salt and pepper.
  8. For the Sweet Balsamic Glaze, pour the balsamic vinegar and honey into a small saucepan. Bring to a boil over medium heat, then reduce the flame and simmer for 5-7 minutes, or until it has thickened slightly to a syrupy consistency. Allow to cool.
