Ingredients
- 7 oz (200g) medium sweet potato, peeled and diced into 2cm cubes
- 1 red (or yellow) pepper, sliced into strips
- 1 can (14 oz / 400g) pre-cooked chickpeas, rinsed and drained
- 2 tbsp (30ml) extra virgin olive oil
- Salt and black pepper to taste
- 2.1 oz (60g) pre-cooked couscous
- 4 fl oz (120ml) boiling water
- 3.5 oz (100g) fresh baby spinach
- For the Tahini and Lemon Dressing:
- 2 tbsp (30g) tahini
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) cold water (or more, for consistency)
- 1/2 finely minced garlic clove (optional)
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6) and line a baking tray with baking parchment.
- In a bowl, combine the sweet potato cubes, pepper, and chickpeas with 1 tablespoon of olive oil, salt, and pepper; spread them out onto the prepared baking tray in a single layer. Roast for 18-20 minutes, turning halfway through, until the vegetables are tender and lightly caramelised.
- Whilst the vegetables are roasting, prepare the couscous: pour the couscous into a bowl, add the boiling water and a pinch of salt, then cover. Leave to rest for 5 minutes, then fluff with a fork.
- In a small bowl, prepare the dressing: whisk together the tahini, lemon juice, cold water, and minced garlic (if using) until a smooth sauce forms. Adjust the consistency with more water if needed, and season with salt.
- In a large bowl, combine the fluffed couscous, fresh baby spinach, and the warm roasted vegetables; the heat from the vegetables will lightly wilt the spinach.
- Pour the tahini and lemon dressing over the salad and gently toss to combine all the ingredients. Serve immediately.
