Quick Overview

  • Preparation Time: 15 minutes
  • Cooking Time: 5 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 5.3 oz (150g) precooked couscous
  • 7 fl oz (200ml) boiling water or vegetable stock
  • 5.3 oz (150g) cherry tomatoes
  • 1 small cucumber
  • 1/2 yellow pepper
  • 1.8 oz (50g) pitted black olives
  • 2.8 oz (80g) feta (or fresh mozzarella)
  • A few fresh basil leaves
  • A few fresh mint leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Fine salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Place the precooked couscous in a large bowl, then add the boiling water or vegetable stock. Cover with a plate or cling film and let it rest for 5 minutes, or according to package instructions, until the liquid is fully absorbed.
  2. Meanwhile, wash the cherry tomatoes and cut them in half or quarters. Peel the cucumber (if desired) and chop it into small cubes. Remove the core and seeds from the yellow pepper, then chop it into cubes the same size as the cucumber.
  3. Fluff the rehydrated couscous with a fork to separate the grains. Add the chopped cherry tomatoes, cucumber, pepper, and black olives to the couscous in the bowl.
  4. Crumble the feta (or cube the fresh mozzarella) and add it to the other ingredients. Roughly tear the fresh basil and mint leaves and gently fold them into the mixture.
  5. In a small bowl, whisk together the extra virgin olive oil with the fresh lemon juice, a pinch of fine salt, and a grind of black pepper. Pour this dressing over the couscous bowl and mix gently to ensure all the ingredients are well combined.
