Quick Frittata: A Rich & Inviting Brunch Dish

Crafting a memorable brunch for a gathering doesn’t have to be a complicated affair. This recipe is designed for those who wish to present a delicious and satisfying dish without lengthy waits or intricate steps. Everything comes together swiftly, allowing you to serve a rich and flavourful frittata in under half an hour, leaving you more time to savour the company.

Ingredients

  • 6 large eggs
  • 3.5 oz (100g) diced pancetta
  • 7 oz (200g) fresh spinach (already washed)
  • 1.8 oz (50g) fresh ricotta
  • 1 oz (30g) grated Parmesan (Parmigiano Reggiano)
  • 1/2 small onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper, to taste

Method

  1. Heat 1 tbsp of olive oil in a large non-stick frying pan (approx. 9.5-10 inches / 24-26 cm) over a medium heat. Add the diced pancetta and cook for 5-7 minutes, until crispy and golden. Remove the pancetta and set aside, leaving the fat in the pan.
  2. Add the finely chopped onion to the same pan and cook for 3-4 minutes, until soft and translucent. Add the fresh spinach and wilt for 2-3 minutes, stirring occasionally, until it has reduced in volume.
  3. Meanwhile, in a large bowl, whisk the eggs with the ricotta, grated Parmesan, a pinch of salt and a generous grind of black pepper. Mix well until the mixture is homogenous.
  4. Distribute the spinach and onion evenly in the pan. Pour the egg mixture over the vegetables. Return the crispy pancetta to the surface.
  5. Cook over a medium-low heat for 8-10 minutes without stirring, until the edges are set and the centre is almost firm. If your pan is oven-safe, you can finish the cooking under a pre-heated grill for 1-2 minutes for a perfect golden top.
  6. Carefully slide the frittata onto a serving plate. Let it rest for a couple of minutes before slicing into wedges and serving.

Serving & Leftovers

Serve the frittata warm or at room temperature, cut into wedges. It’s excellent accompanied by a simple green salad or toasted bread. Any leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently.
