Ingredients

  • 3.5 oz (100g) cherry or datterini tomatoes
  • 3.5 oz (100g) buffalo stracciatella
  • A few fresh basil leaves

  • Freshly ground black pepper, to taste

Method

  1. To begin, slice the bread and toast it in a hot non-stick frying pan, on a griddle, or in a toaster for approximately 3-5 minutes, until golden and crisp on both sides.
  2. Meanwhile, halve the avocado, remove the stone, and scoop out the flesh. Mash the flesh with a fork in a bowl, seasoning with a pinch of salt and pepper.
  3. Wash and halve or quarter the cherry tomatoes, depending on their size.
  4. Gently drain the stracciatella from its preserving liquid.
  5. Once toasted, lightly rub each slice of bread with an avocado half for an extra touch of flavour, then generously spread with the prepared avocado mash.
  6. Distribute the chopped tomatoes over the avocado, then evenly arrange the stracciatella on top of the crostini.
  7. Finish each crostini with a few fresh basil leaves, a drizzle of extra virgin olive oil, and a grind of black pepper. Serve immediately.

Serving & Leftovers

These crostini are designed to be enjoyed immediately after preparation, when the bread is still warm and crisp, and the stracciatella is at its freshest. They are not suitable for storing, as avocado tends to oxidise quickly, and the bread will lose its delightful crunch.
