Method

  1. In a heavy-bottomed saucepan, heat the olive oil over a medium flame. Add the finely chopped onion and sauté for approximately 3-4 minutes until it becomes translucent.
  2. Stir in the minced garlic and cook for another minute, until its aroma is released. Be careful not to burn it.
  3. Add the uncooked rice to the saucepan and toast it for 2 minutes, stirring constantly, until the grains appear slightly transparent around the edges.
  4. Pour in the passata, hot vegetable stock, ground cumin, and sweet paprika. Stir well, bring to a boil, then reduce the heat to its lowest setting, cover, and cook for 15 minutes.
