  • 12 fl oz (350ml) hot vegetable stock

  • A handful of fresh parsley, finely chopped

  • Freshly ground black pepper, to taste
  • Juice of half a lemon (optional)

Method

  1. To begin, finely chop the red onion and dice the courgette into very small cubes. Halve or quarter the tomatoes, depending on their size.
  2. Heat 1 tablespoon of extra virgin olive oil in a frying pan over a medium heat, then add the onion and sauté for 2-3 minutes until translucent.
  3. Add the courgette cubes and tomatoes, season lightly with salt and pepper, and cook for about 5 minutes, or until the vegetables are tender but still have a slight bite.
  4. Meanwhile, place the couscous in a large bowl. Pour the boiling hot vegetable stock over the couscous, ensuring it is completely covered. Cover the bowl with a lid or cling film and let it rest for 5-7 minutes, or according to package instructions, until the stock has been fully absorbed.
  5. Fluff the couscous with a fork, separating the grains well. Gently stir in the sautéed vegetables, finely chopped mint and parsley. Add the remaining 1 tablespoon of extra virgin olive oil and, if desired, the lemon juice. Mix delicately to combine all ingredients.
