Ingredients

  • 17.6 oz (500g) minced beef
  • 1 large egg
  • 2.1 oz (60g) breadcrumbs
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 fl oz (30ml) tomato purée
  • 8.5 fl oz (240ml) beef stock
  • 1 teaspoon Dijon mustard (optional, for the glaze)

Method

  1. In your pressure cooker, select the “Sauté” function and brown the chopped onion and garlic for 3-4 minutes until softened. Switch off the function and allow it to cool slightly.
  2. In a large bowl, combine the minced beef, egg, breadcrumbs, cooked onion and garlic, Worcestershire sauce, oregano, salt, and pepper. Gently mix with your hands until the ingredients are well combined, being careful not to overwork the mixture.
  3. Form the mixture into a single compact meatloaf, either oval or rectangular in shape, ensuring it fits comfortably into your pressure cooker.
  4. Pour the beef stock into the pressure cooker and scrape the bottom with a spatula to release any browned bits. In a small bowl, mix the tomato purée with the Dijon mustard (if using) and a tablespoon of stock, then spread half of this glaze over the meatloaf.
  5. Carefully place the meatloaf directly into the stock or onto a trivet (if available). Close the lid of the pressure cooker, making sure the valve is in the sealed position.
  6. Set to cook at high pressure for 12 minutes. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then manually release any remaining pressure.
  7. Open the cooker, brush the meatloaf with the remaining glaze, and let it rest for a few minutes before slicing and serving.

Serving & Leftovers

Slice the meatloaf and serve warm with the cooking gravy. It pairs wonderfully with mashed potatoes or steamed vegetables. Any leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat gently to maintain moisture.
