Ingredients

  • 14.1 oz (400g) fresh runner beans
  • 7.1 oz (200g) cherry tomatoes
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • A pinch of chilli (optional)
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
  • A few fresh basil leaves, to garnish

Method

  1. Top and tail the runner beans, discarding the ends, then wash them thoroughly under running water. Halve the cherry tomatoes and finely chop the garlic cloves.
  2. Heat the extra virgin olive oil in a large non-stick frying pan over a medium heat. Add the chopped garlic and the chilli (if using), allowing them to sizzle for about 1 minute until the garlic is lightly golden.
  3. Add the runner beans to the pan. Pour in a couple of tablespoons of water, cover with a lid, and cook for 8-10 minutes, or until the runner beans are tender but still slightly crunchy.
  4. Stir in the halved cherry tomatoes, mix gently, and continue cooking without the lid for another 5-7 minutes, allowing the cherry tomatoes to soften and release their juices.
  5. Season with salt and pepper to your taste. Turn off the heat and tear the fresh basil leaves by hand before stirring them through.
