Ingredients
- 7 oz (200g) baguette or rustic loaf, sliced into 0.4 inch (1cm) thick rounds
- 7 oz (200g) cherry tomatoes, mixed if possible, washed and halved
- 1 garlic clove, peeled and halved
- A small bunch of fresh basil, washed
- 4.4 oz (125g) fresh mozzarella, well-drained and diced
- 2.8 oz (80g) high-quality cooked ham, cut into strips
- 3.5 oz (100g) cream cheese (such as Philadelphia)
- 1.8 oz (50g) pitted black olives, roughly chopped
- Extra virgin olive oil, to taste
- Fine salt and freshly ground black pepper, to taste
Method
- Preheat your oven to 200°C (Gas Mark 6 / 400°F) or a non-stick frying pan over a medium heat. Arrange the bread slices on a baking tray and toast in the oven for 8-10 minutes, or until lightly golden. Alternatively, toast them in the frying pan for 2-3 minutes per side.
- While the bread toasts, prepare the first topping: in a bowl, combine the halved cherry tomatoes, half of the finely chopped garlic, half of the shredded basil, a drizzle of olive oil, salt, and pepper. Mix well.
- For the second topping: in another bowl, mix the cream cheese with the chopped olives and a pinch of pepper.
- Prepare the third topping: dice the mozzarella and shred the remaining basil.
- Once toasted, rub the warm bread slices with the cut side of the remaining garlic clove.
