Quick Sautéed Green Beans with Cherry Tomatoes

This recipe for quick sautéed green beans with cherry tomatoes is designed for maximum efficiency, bringing a fresh and vibrant dish to your table in under 30 minutes. The key lies in strategic time management, blanching the green beans while you prepare the other ingredients. This parallel cooking approach ensures no time is wasted, allowing you to heat the water for the beans while you wash and halve the cherry tomatoes and finely chop the garlic. The pan-frying stage then takes just a few minutes, sealing in those fresh flavours. It’s a reliable method for evenings when time is short, but you still desire something wholesome and satisfying. This approach transforms a simple side into a swift culinary experience, proving delicious, home-cooked meals are always within reach, even on busy weekdays.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 10.6 oz (300g) fresh green beans
  • 7 oz (200g) cherry tomatoes
  • 2 cloves garlic
  • 2 tbsp (30ml) extra virgin olive oil
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • A few fresh basil leaves (optional)

Method

  1. Prepare the green beans. Top and tail them, then wash thoroughly. Place a large pot of water on the hob to boil for blanching.
  2. While the water is heating, wash the cherry tomatoes and halve them. Peel the garlic cloves and finely chop them.
  3. Once the water is boiling, season it with salt and add the green beans. Blanch for 5-7 minutes until they are tender-crisp.
  4. Drain the green beans and immediately rinse them under cold water to stop the cooking process and preserve their vibrant colour.
  5. Heat the olive oil in a large frying pan over a medium heat. Add the chopped garlic and sauté for about one minute, being careful not to burn it.
  6. Add the halved cherry tomatoes to the pan and cook for 3-4 minutes until they begin to soften slightly.
  7. Stir in the blanched green beans and sauté with the other ingredients for another 2-3 minutes. Season with salt and pepper to taste. If using, stir in the chopped fresh basil.

Serving & Leftovers

Serve the sautéed green beans warm as a side dish or a light meal. Any leftovers can be stored in an airtight container in the fridge for up to 2 days, and gently reheated in a pan or microwave.
