  • 1 tbsp fresh lemon juice
  • Fine salt and freshly ground black pepper, to taste
  • Fresh parsley or mint, chopped, for garnish

Method

  1. Place the couscous in a large bowl. Add the boiling water or hot stock, a pinch of salt, and a teaspoon of olive oil. Cover the bowl and let it rest for approximately 5-7 minutes until the liquid is fully absorbed.
  2. While the couscous is resting, drain and rinse the chickpeas. Meanwhile, wash and halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
