Ingredients

  • 7 oz (200g) lean beef mince
  • 1/2 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp tomato purée
  • 3.5 fl oz (100ml) beef stock (or vegetable stock)
  • 5.3 oz (150g) mozzarella (or smoked provola), grated
  • 2 Romagna piadine
  • 2 tbsp extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 tsp dried oregano
  • A pinch of chilli powder (optional)

Method

  1. Heat 1 tbsp olive oil in a large frying pan over a medium heat. Add the finely chopped onion and sauté for 2-3 minutes until translucent.
  2. Stir in the minced garlic and lean beef mince. Brown the meat, breaking it up with a spatula, for about 5-7 minutes until well browned. Drain any excess fat.
  3. Stir in the tomato purée, dried oregano, chilli powder (if using), salt, and pepper. Mix well for one minute, then pour in the beef stock. Simmer for 5-7 minutes, or until the liquid has slightly reduced and the filling is flavourful.
  4. While the filling is cooking, gently heat the remaining beef stock in a small saucepan. Add a pinch of dried oregano and a pinch of salt and pepper. Keep warm for dipping.
  5. Heat the remaining 1 tbsp olive oil in the same pan (cleaned, if necessary, or in another non-stick frying pan) over a medium heat. Place one piadina in the pan and spread half of the beef filling over one half of the piadina. Top with half of the grated mozzarella.
  6. Fold the piadina in half to form a crescent shape and press gently. Cook for 2-3 minutes per side, until the piadina is golden brown and crispy, and the cheese is melted. Repeat with the second piadina.

Serving & Leftovers

Serve the piadine immediately, cut in half, accompanied by the warm stock for dipping. Any leftover filling can be stored in the fridge in an airtight container for up to 2 days and reheated before use. Cooked piadine are best enjoyed fresh.
