  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, to serve (optional)

Method

  1. In a large Dutch oven or casserole dish, heat the olive oil over a medium flame. Add the sausage and cook, breaking it up with a spoon, until browned and thoroughly cooked, about 5-7 minutes. Drain any excess fat and set the cooked sausage aside.
  2. In the same pot, add the chopped carrot, celery, and onion. Sauté over a medium heat for about 4-5 minutes, or until softened. Stir in the minced garlic, oregano, thyme, and chilli flakes (if using); cook for 1 minute more, stirring constantly.
  3. Pour in the chicken or vegetable stock and bring the mixture to a boil. Add the small pasta shapes and cook according to package instructions, typically 8-10 minutes, stirring occasionally to prevent sticking.
  4. When the pasta is almost al dente, return the cooked sausage to the pot along with the rinsed cannellini beans. Stir well and allow to simmer for another 2-3 minutes, just to heat through the beans and meld the flavours.
  5. Finally, stir in the chopped fresh spinach and cook until wilted, which should take approximately 1 minute. Taste and adjust for salt and pepper as needed. Serve piping hot, garnished with grated Parmesan cheese if desired.
