Method

  1. In a large Dutch oven or heavy-based pan, heat the olive oil over a medium flame. Add the sausage, removed from its skin, and crumble it with a wooden spoon, cooking for 4-5 minutes until well browned. Remove the sausage and set aside, leaving the fat in the pan.
  2. In the same pan, add the onion, carrot, and celery. Sauté for about 5-6 minutes, stirring occasionally, until the vegetables have softened slightly.
  3. Stir in the courgette, chopped peeled tomatoes, and cannellini beans. Mix well and allow to cook for 2 minutes to meld the flavours.
  4. Pour the hot vegetable stock into the pan. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  5. Add the small pasta and the previously cooked sausage. Continue to cook for 8-10 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
