Ingredients

  • 1 roll of ready-rolled shortcrust pastry
  • 3 large eggs
  • 6.8 fl oz (200ml) double cream
  • 1.7 fl oz (50ml) whole milk

Method

  1. Preheat your oven to 200°C (Gas Mark 6). Unroll the shortcrust pastry and line a 20-22 cm (8-9 inch) tart tin, then prick the base all over with a fork.
  2. Finely chop the onion and sauté it in a frying pan with the olive oil over a medium heat for 3-4 minutes, until it’s soft and translucent.
  3. Evenly spread the diced cooked ham and grated cheese over the base of the pastry, then scatter over the sautéed onion.
  4. In a separate bowl, whisk the eggs with the double cream, milk, a pinch of salt, freshly ground black pepper, and the nutmeg.
  5. Gently pour the liquid mixture over the solid ingredients in the tart tin, ensuring everything is well distributed.
  6. Bake for 18-20 minutes, or until the surface of the quiche is golden and the filling appears firm in the centre.
