  • 70.4 fl oz (2 litres) hot vegetable (or chicken) stock
  • Fine sea salt and freshly ground black pepper, to taste
  • 1-2 oz (30-60g) piece of Parmesan Reggiano rind (optional)
  • 4.9 oz (140g) small pasta (conchigliette, ditalini or elbow macaroni)
  • 3.5 oz (100g) fresh spinach, roughly chopped
