Quick Overview
- Preparation Time: 10 minutes
- Cooking Time: 18 minutes
- Difficulty: Easy
- Serves: 2
Ingredients
- 7 oz (200g) linguine
- 8.8 oz (250g) cherry or baby plum tomatoes
- 2 large garlic cloves
- A generous bunch of fresh basil
- 4 tbsp extra virgin olive oil
- 1/2 tsp red chilli flakes (or to taste)
- Fine salt and freshly ground black pepper, to taste
- Pasta cooking water
Method
- Bring a large pan of generously salted water to the boil for the pasta. Meanwhile, wash the tomatoes and halve them. Peel and finely slice the garlic cloves.
- Add the linguine to the boiling water and cook according to package instructions until al dente, typically 8-10 minutes.
- While the pasta cooks, heat the extra virgin olive oil in a large frying pan over a medium heat. Add the sliced garlic and chilli flakes, gently sautéing for 1-2 minutes until the garlic is golden and fragrant, taking care not to burn it.
- Stir the halved tomatoes into the pan with the garlic. Increase the heat slightly and cook for 5-7 minutes, stirring occasionally, until they begin to soften and release their juices.
- Before draining the pasta, reserve about 4 fl oz (120ml) of the cooking water. Drain the linguine and transfer it directly into the frying pan with the tomato sauce.
- Add the fresh basil, torn by hand, and a ladleful of the reserved pasta cooking water. Toss vigorously to combine, letting the pasta sauté in the sauce for 1-2 minutes to absorb the flavours. Adjust with salt and pepper to taste.
Serving & Leftovers
Serve the linguine immediately, garnished with extra fresh basil if desired. This dish is best enjoyed fresh to appreciate its vibrant flavours. Any leftovers can be stored in an airtight container in the fridge for up to 1 day, though the pasta’s texture and basil’s freshness may diminish.
