Method

  3. Stir the minced garlic into the mushrooms and continue to cook for another minute until the garlic is fragrant. Be careful not to burn it, as this can lead to a bitter taste.
  4. Pour the double cream and vegetable stock (or a ladleful of the tortellini cooking water) into the pan with the mushrooms. Bring to a gentle simmer, then reduce the heat and let it bubble softly for 2-3 minutes until the sauce has slightly thickened.
  5. Drain the cooked tortellini and transfer them directly into the pan with the creamy sauce. Add the grated Parmigiano Reggiano and stir well to combine everything. Adjust the seasoning with salt and pepper to your liking.
