Ingredients

  • 5.3 oz (150g) precooked couscous
  • 7 fl oz (200ml) boiling water
  • 1/2 tsp fine salt
  • 7 oz (200g) tinned chickpeas, drained and rinsed
  • 5.3 oz (150g) cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 yellow or red bell pepper, diced
  • 1.8 oz (50g) pitted black olives, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp dried oregano
  • Freshly ground black pepper, to taste

Method

  1. Bring the water to a boil with the salt in a small saucepan. Pour the couscous into a bowl, add the boiling water and immediately cover with a lid or cling film. Allow to rest for 5 minutes.
  2. While the couscous is resting, prepare the other ingredients: drain and rinse the chickpeas. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the olives.
  3. In a small bowl, prepare the dressing by whisking together the extra virgin olive oil with the lemon juice and dried oregano. Add a pinch of salt and a grind of black pepper.
  4. Fluff the couscous with a fork to separate the grains. Transfer it to a larger bowl or directly to your serving plates.
  5. Add the chickpeas, cherry tomatoes, cucumber, bell pepper, and olives to the couscous. Pour over the prepared dressing and gently mix to combine all the ingredients.
