  • 3.5 fl oz (100ml) coconut milk (cream or light)
  • Fine salt and freshly ground black pepper, to taste
  • Fresh coriander, chopped, for garnishing

Method

  1. Heat the oil in a large pot or deep pan over a medium heat. Add the chopped onion and cook for 3-4 minutes, until softened and translucent.
  2. Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  3. Add the mustard seeds, curry powder, turmeric, and chilli powder. Cook for 30 seconds, stirring constantly, to toast the spices.
  4. Stir in the cubed sweet potatoes, drained cannellini beans, chopped tomatoes, and hot vegetable stock. Bring the mixture to a gentle boil.
  5. Cover the pot, reduce the heat to low, and simmer for 10-12 minutes, or until the sweet potatoes are tender.
  6. Remove the lid, add the coconut milk, and stir well. Season with salt and pepper to your taste.
  7. Serve the stew hot, garnished with plenty of fresh, chopped coriander.
