Ingredients

  • 4 sheets filo pastry (about 1.8 oz (50g))
  • 2 large eggs
  • 1.7 fl oz (50ml) whole or semi-skimmed milk
  • 1 small courgette (about 5.3 oz (150g))
  • 1/2 yellow pepper (about 3.5 oz (100g))
  • 6-8 cherry tomatoes
  • 1 oz (30g) grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
  • A few fresh basil leaves, for garnish

Method

  1. Preheat your oven to 180°C (Gas Mark 4). Wash and julienne the courgette and pepper thinly. Halve the cherry tomatoes.
  2. In a medium bowl, whisk the eggs with the milk, grated Parmesan, a pinch of salt, and a grind of pepper. Set aside.
  3. Take one sheet of filo pastry and lightly brush it with a little olive oil. Gently crumple it to form a rosette shape and place it into a small ovenproof dish (approximately 8 inches (20cm) in diameter). Repeat with the remaining three sheets of filo pastry, arranging them to create a ruffled edge.
  4. Evenly distribute the courgette, pepper, and cherry tomatoes within the filo pastry shell.
  5. Pour the egg and milk mixture over the vegetables, ensuring it spreads well amongst the filo layers and vegetables.
  6. Bake in the preheated oven for 15-18 minutes, or until the bake is golden, puffed, and set firm in the centre.

Serve the bake warm or at room temperature, garnished with fresh basil leaves. Any leftovers can be stored in an airtight container in the fridge for up to 2 days and gently reheated.
