Ingredients

  • 7 oz (200g) chicken breast
  • 4.2 oz (120g) precooked couscous
  • 1 medium courgette
  • 3.5 oz (100g) cherry tomatoes
  • 1.7 oz (50g) pitted Taggiasca olives
  • 1.7 oz (50g) fresh rocket
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon (juice)
  • 1 tsp dried oregano
  • Fine salt and freshly ground black pepper to taste

Method

  1. Prepare the couscous: Bring 5.3 fl oz (150ml) of salted water to the boil. Pour the couscous into a bowl, add the boiling water, cover, and leave to rest for 5 minutes.
  2. Chop the chicken and courgettes: Whilst the couscous rests, slice the chicken breast into thin strips and the courgette into fine julienne strips or half-moons.
  3. Cook the chicken and courgettes: Heat one tablespoon of oil in a non-stick frying pan over a medium-high heat. Add the chicken and cook for 5-7 minutes, until golden. Add the courgettes and continue to cook for another 5-6 minutes, or until tender but still crisp. Season with salt and pepper.
  4. Prepare the fresh ingredients: Meanwhile, wash and halve the cherry tomatoes. Drain the Taggiasca olives and wash the rocket.
  5. Dress and assemble: Fluff the couscous with a fork. In a small bowl, emulsify the remaining tablespoon of oil with the lemon juice and oregano. Combine the couscous, cooked chicken and courgettes, cherry tomatoes, olives, and rocket in a large bowl. Dress with the vinaigrette and mix gently.
